Activate the Yeast:Warm the milk until it’s lukewarm (about 100°F to 110°F). Add the sugar to the milk and stir until dissolved. Sprinkle the yeast over the milk and sugar mixture. Let it sit for about 5-10 minutes, or until it becomes frothy.
Prepare the Dry Mix: In a large bowl, whisk together the GF all-purpose flour, salt, and baking powder. Ensure they’re well combined.
Mixing the Dough:Pour the activated yeast mixture into the large bowl containing the dry ingredients. Mix gently until they’re combined. Add the melted butter, eggs, and apple cider vinegar. With a hand mixer or stand mixer fitted with a paddle attachment: Mix for 3-4 minutes to develop the dough.
Proofing the Dough:Shape the dough into small balls and place them in a baking dish lined with parchment paper or a well-oiled muffin pan. Brush the rolls with an egg wash mixture made by combining 1 egg with 1 teaspoon water and whisking well. Cover the dough balls with plastic wrap. Let them rest in a warm place for about 30-45 minutes or until they’ve expanded in size.
Baking:Preheat your oven to 375°F (190°C). Once the rolls have risen, bake them in the preheated oven for about 20-25 minutes, or until they are golden brown.
