Salted Caramel Oatmeal Cookie Recipe

Ingredients

  • ¾ cup unsalted butter softened (170g)
  • 1 cup packed dark brown sugar 215g
  • ½ cup granulated sugar 100g
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 cup all-purpose flour 150g
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ teaspoon nutmeg
  • ¾ teaspoon cinnamon
  • 2 cups quick oats
  • 1 cup caramel baking bits or chopped soft caramels

Instructions

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
  • In a large bowl, cream butter, brown sugar, and granulated sugar until light and fluffy.
  • Beat in the egg and vanilla.
  • In a separate bowl, whisk flour, baking soda, salt, nutmeg, and cinnamon.
  • Gradually add the dry ingredients to the wet mixture until combined.
  • Fold in oats and caramel bits.
  • Drop dough by rounded tablespoons onto prepared cookie sheets, spacing 2 inches apart.
  • Bake 10-12minutes, until golden brown.
  • Cool on the sheet for 2 minutes, transfer to a cooling rack, and top with flaky sea salt.
