The Best Royal Icing Recipe with Meringue Powder

Ingredients

  • 4 cups Confectioners Sugar
  • 4 tablespoon Meringue Powder
  • 7-9 tablespoon Water
  • 1 teaspoon Clear Vanilla Extract
  • 2 tablespoon Corn Syrup (optional- this gives the finished icing a softer bite) OMIT if you are using this for gluing together a gingerbread house.

Instructions

  • In a large bowl, combine confectioner’s sugar, meringue powder, and 8 Tbsp. water and mix on low speed until the ingredients are well combined.
  • Adjust the consistency of your icing according to your preferences. You can add a little bit more water for a thinner icing or more powdered sugar for a thicker icing.
  • Leftover icing can be stored in an airtight container for a long time. Just make sure to cover the surface with plastic wrap to prevent it from drying out. If you plan to use it again, a quick spray of water and a good mix will bring it back to life.
