Easy Homemade Granola Recipe (with Chunky Clusters)

This customizable homemade granola recipe bakes up with big crunchy clusters and endless flavor possibilities. Start with the base recipe, then create your own signature blend with your favorite nuts, seeds, spices, and mix-ins.

Ingredients

  • 3 cups old-fashioned rolled oats
  • ½ cup oil avocado oil, melted coconut oil, or light olive oil
  • ½ cup honey or pure maple syrup
  • 2 tablespoon brown sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon kosher salt

Nuts and Crunch (Choose up to ½ cup total)

  • Sliced almonds
  • Chopped walnuts
  • Pecans
  • Pumpkin seeds
  • Sunflower seeds

Seeds (Choose up to ¼ cup total)

  • Chia seeds
  • Ground flaxseed
  • Sesame seeds
  • Hemp hearts

Flavor Boosters (Optional)

  • 1 teaspoon cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon orange zest
  • Additional vanilla extract

Sweet Mix-Ins (Add After Baking)

  • Dried cranberries
  • Raisins
  • Chopped dates
  • Dark chocolate chunks
  • Unsweetened coconut flakes

Instructions

  • Preheat oven to 250°F. Line a rimmed baking sheet or sheet pan with parchment paper.
  • In a saucepan over medium heat, combine the oil, honey or maple syrup, brown sugar, and salt. Bring to a rolling boil, stirring occasionally. The mixture will become very hot and bubbly. Remove from heat and stir in the vanilla extract.
  • In a large bowl, combine the rolled oats and any ingredients you've selected from the Nuts and Crunch, Seeds, and Flavor Boosters categories.
  • Pour the hot syrup mixture over the oat mixture. Stir until everything is evenly coated.
  • Transfer the granola to the prepared baking sheet and press firmly into an even layer.
  • Bake for 45 minutes, rotating the pan halfway through if needed. Do not stir.
  • Remove from the oven and allow the granola to cool completely on the pan without stirring. The clusters will continue to form as the granola cools.
  • Once completely cool, stir in any Sweet Mix-Ins and break the granola into clusters.

Notes

For big crunchy clusters, do not stir the granola during baking or cooling.
Store granola in an airtight container at room temperature for up to 10 days.
Nuts and seeds should be added before baking. Dried fruit and chocolate should always be added after baking.
