This simple combination creates crunchy clusters and a neutral flavor that works with almost any add-in.

  • Old-fashioned whole oats
  • Oil (avocado oil, melted coconut oil, or light olive oil)
  • Honey or pure maple syrup
  • Brown sugar
  • Vanilla extract
  • Pinch of salt

Nuts and Crunch (Add Before Baking)

Choose two. Nuts and seeds add texture, crunch, and that irresistible nutty flavor that makes homemade granola so satisfying

  • Almonds
  • Walnuts
  • Pumpkin seeds

Healthy Texture (Add Before Baking)

Choose up to one or two. A small amount of these ingredients add extra nutrition, healthy fats, and a hearty texture without overpowering the granola.

  • Chia seeds
  • Ground flax seeds
  • Sesame seeds
  • Hemp hearts

Flavor Boosters (Add Before Baking)

This is where you can make the recipe your own. Spices and extracts transform the same base recipe into endless flavor combinations.

  • Vanilla extract
  • Cinnamon
  • Pumpkin pie spice
  • Orange zest

Sweet Mix-Ins (Add After Baking)

Stir these in after the granola has cooled completely for the best texture and flavor.

  • Dried fruit like raisins, cranberries, or chopped dates
  • Chocolate chips or dark chocolate chunks
  • Unsweetened coconut flakes

How to Make Homemade Granola

Step 1: Prepare the Pan

Preheat the oven to 250 degrees F. Line a sheet pan or rimmed baking sheet with parchment paper.

Step 2: Make the Syrup Mixture

In a saucepan over medium heat, combine the oil, honey or pure maple syrup, and brown sugar. Bring the mixture to a rolling boil, stirring occasionally.

Be sure to use a large enough saucepan, as the mixture will become very hot and bubble vigorously. The syrup needs to reach a full boil so the ingredients emulsify and create the coating that helps form those crunchy clusters.

Step 3: Mix the Dry Ingredients

In a large bowl, combine the rolled oats and any ingredients you've chosen from the Nuts and Crunch, Seeds, and Flavor Boosters categories. Stir well so the nuts, seeds, and spices are evenly distributed throughout the oat mixture.

Pour the hot syrup mixture over the dry ingredients and stir until everything is evenly coated. Take your time with this step and scrape the bottom of the bowl as you mix so there are no dry pockets hiding underneath.

Step 4: Spread and Bake

Transfer the oat mixture to the prepared sheet pan. Press it into an even layer. Baking the granola in an even layer is one of the secrets to getting crispy clusters.

Bake until golden brown. Do not stir during baking.

Step 5: Cool Completely

Allow the granola to cool completely on the sheet pan. As the granola cools, the crispy clusters form.

Step 6: Add Sweet Mix-Ins

Once cooled to room temperature, stir in any dried fruit, chocolate chips, or unsweetened coconut flakes.

Allyson's Tips for Big Clusters

  • Press the granola firmly into an even layer before baking.
  • Don't stir while baking, or while cooling.
  • Let the granola cool completely before breaking it apart.

The only thing harder than making homemade granola is waiting for it to cool.

Create Your Signature Blend

Here are a few favorite mix-ins to get you started.

Cranberry Almond Vanilla

Add almonds before baking. Stir in dried cranberries after cooling.

Maple Walnut Cinnamon

Use pure maple syrup in the base recipe and add walnuts and cinnamon before baking.

Seed Lover's Granola

Combine pumpkin seeds, sunflower seeds, chia seeds, and flax seeds for extra crunch and nutty flavor.

How to Serve Homemade Granola

There are so many delicious ways to enjoy homemade granola. Sprinkle it over Greek yogurt with fresh berries, layer it into a yogurt parfait, or enjoy it with milk for an easy breakfast. It also makes a great grab-and-go snack straight from the jar.

Ingredients

  • 3 cups old-fashioned rolled oats

Nuts and Crunch (Choose up to ½ cup total)

  • Sliced almonds
  • Chopped walnuts
  • Pecans
  • Pumpkin seeds
  • Sunflower seeds

Seeds (Choose up to ¼ cup total)

  • Chia seeds
  • Ground flaxseed
  • Sesame seeds
  • Hemp hearts

Flavor Boosters (Optional)

  • 1 teaspoon cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon orange zest
  • Additional vanilla extract

Sweet Mix-Ins (Add After Baking)

Instructions

  • In a large bowl, combine the rolled oats and any ingredients you've selected from the Nuts and Crunch, Seeds, and Flavor Boosters categories.
  • Pour the hot syrup mixture over the oat mixture. Stir until everything is evenly coated.
  • Transfer the granola to the prepared baking sheet and press firmly into an even layer.
  • Bake for 45 minutes, rotating the pan halfway through if needed. Do not stir.
  • Remove from the oven and allow the granola to cool completely on the pan without stirring. The clusters will continue to form as the granola cools.
  • Once completely cool, stir in any Sweet Mix-Ins and break the granola into clusters.

Notes

For big crunchy clusters, do not stir the granola during baking or cooling.
Store granola in an airtight container at room temperature for up to 10 days.
Nuts and seeds should be added before baking. Dried fruit and chocolate should always be added after baking.
