TikTok Fudgy Brownies

These TikTok-inspired brownies are rich, dense, and incredibly fudgy with a glossy, crackly top. No boxed mix needed—just simple ingredients and bold chocolate flavor in every bite.

Ingredients

  • 9 tablespoons unsalted butter 136 g, melted
  • cups granulated sugar 275 g
  • ¾ cup unsweetened cocoa powder 65 g
  • 2 large eggs room temperature
  • 1 large egg yolk
  • 1 teaspoon vanilla extract 4 g
  • cup all-purpose flour 45 g
  • ¼ teaspoon salt 1.5 g
  • ½ cup semi-sweet chocolate chips 70g

Instructions

Prep your pan:

  • Preheat oven to 350°F (175°C). Line an 8-inch square prepared pan with parchment paper, leaving overhang for easy removal.

Make the butter mixture:

  • In a heatproof bowl, melt the butter. Stir in the granulated sugar and cocoa powder until fully combined.

Add the eggs mixture:

  • Whisk in the eggs and egg yolk one at a time until the mixture is smooth, glossy, and thick. Stir in the vanilla.

Add the dry ingredients:

  • Gently fold in the flour and salt using a rubber spatula or wooden spoon. Be careful not to overmix.

Fold in the chocolate:

  • Stir in the chocolate chips, saving a few to sprinkle on top of the batter.

Bake:

  • Spread the batter evenly in your prepared pan and bake at 350°F (175°C) for 25–28 minutes or until a toothpick inserted comes out with moist crumbs (not wet batter).

Cool and serve:

  • Let brownies cool in the pan for at least 2–3 hours for clean slices. Lift using parchment paper and cut into squares.

Notes

  • For the shiny top: Whisk the eggs and sugar well until the mixture is thick and glossy. This creates that crackly, TikTok-famous crust.
  • Use Dutch-processed cocoa powder for a deeper, smoother chocolate flavor—but regular unsweetened cocoa (like Hershey’s) works too!
  • Don’t overmix after adding the flour. Gently fold it in just until combined to keep the brownies soft and fudgy.
  • Use an 8x8-inch pan to keep the brownies thick and chewy with crispy edges.
  • Let them cool completely (2–3 hours) before slicing for clean edges and the best texture.
  • Customize it! Add chocolate chunks, a swirl of peanut butter or almond butter, or a sprinkle of sea salt on top before baking.
