Panera has recently updated its menu, but sadly, the beloved Triple Berry Scone, which has been absent for a few years, isn't coming back anytime soon. To satisfy those cravings, I'm thrilled to share a homemade version of this favorite treat.

If there's one thing that can elevate a breakfast or brunch experience, it's a freshly baked scone. And when it comes to scones, Panera Bread knows how to do them just right. 

Here's Panera's description of the scone we're making today: "A freshly baked, cream-based scone filled with dried strawberries, blueberries, and raspberry-flavored chips, topped with a light white icing and half & half cream glaze."

Their Triple Berry Scones are a delicious mix of tart and sweet, bursting with the flavors of fresh berries. Luckily, you can recreate this bakery favorite right in your own kitchen with this easy-to-follow recipe.

  • 2 cups all-purpose flour
  • ⅓ cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter cold and cubed
  • 1 cup mixed fresh berries (or dried) such as blueberries, raspberries, and strawberries, washed and dried
  • ½ cup heavy cream
  • ¼ cup sour cream
  • 1 tablespoon lemon zest
  • 1 tablespoon orange zest
  • ½ cup Raspberry flavored baking chips optional

Instructions

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  • Add the cold cubed butter to the flour mixture. Using a pastry cutter or a food processor, cut the butter into the flour until the mixture resembles coarse crumbs.
  • Gently fold in the mixed berries until evenly distributed in the flour mixture.
  • In a separate small bowl, whisk together the heavy cream, sour cream, lemon zest, and orange zest.
  • Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
  • Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together.
  • Pat the dough into a circle about 1 inch thick. Use a bench scraper or a sharp knife to cut the dough into 8 wedges.
  • Transfer the scones to the prepared baking sheet, leaving some space between each one.
  • Brush the tops of the scones with a little extra cream for a golden finish.
  • Bake in the preheated oven for 15-18 minutes, or until the scones are golden brown and cooked through.
  • Allow the scones to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
