Copycat Panera Scone Recipe for Berry Lovers

This Copycat Panera Scone Recipe is loaded with fresh summer berries and chunks of creamy white chocolate. They are easy to make, but impossible to resist.

Copycat Triple Berry Scone

Panera has recently updated its menu, but sadly, the beloved Triple Berry Scone isn't coming back anytime soon. To satisfy those cravings, I'm sharing my homemade version of this delicious bakery treat. 

They are a delicious mix of tart and sweet, bursting with the flavors of fresh berries. Luckily, you can recreate this bakery favorite right in your own kitchen with this easy-to-follow recipe. 

Let's dive into the process to the process for making perfect scones. 

Start With the Dry Ingredients

Before you start mixing, gather all the dry ingredients you'll need:

Flour Mixture: Begin with a medium bowl and whisk together the all-purpose flour, baking powder and salt. 

Once you've mixed your dry ingredients, it's time to move on to the next step in the recipe.

Mixing the Dough

Now that your dry ingredients are ready, it's time to bring the dough together. Here's what you'll need:

Cold Butter: For the best results, use frozen butter grated using a box grater or a cheese grater. Keeping the butter very cold helps the scones to have a flaky texture.

Pastry Cutter or Food Processor: You can either use a pastry cutter or a food processor to cut the cold butter into the flour mixture until it resembles coarse crumbs. 

Fresh Berries: You can use fresh berries, dried berries, or a combination of both. Just make sure the fresh berries are washed and dried before adding them to the dough.

Whitte Chocolate Chips: For that authentic Panera Triple Berry Scone taste, feel free to add ½ cup white chocolate baking pieces.

Once you've incorporated the butter and berries into the flour mixture, it's time to add the wet ingredients.

Adding the Wet Ingredients

To bind the dry ingredients together and add moisture to the dough, you'll need the following wet ingredients:

Heavy Cream: Adds a rich texture to the scones.

Sour Cream: Adds a nice tangy flavor, and extra moisture so the scones aren't dry. 

Orange Zest: For a bright and citrusy flavor, add the juice and zest of one  orange to the dough.

Combine the wet ingredients and gently mix into the dry ingredients until a shaggy dough forms. Be careful not to overmix. This is the main cause of dense, tough scones.

Shaping and Baking Your Scones

With your dough ready, it's time to shape and bake your scones. Here's how:

Forming the Dough: Turn the dough out onto a lightly floured surface and gently press it into a ball.

Cutting the Scones: Flatten the dough into a circle and use a sharp knife or a bench scraper to cut it into wedges. Place the scones on a parchment paper lined baking sheet, leaving a little space between each one to allow for rising.

Baking:Preheat your oven to 350 degrees F. Brush the tops of the scones with a little heacy cream and bake the scones for 13-15 minutes, or until they're golden brown and puffed up.

Once baked, transfer them to a wire rack to cool slightly before serving. Brush the cooled scones with a glaze made by mixing powdered sugar with heavy cream.

Storage

These scones are best the day they are baked, but they'll stay fresh for 2 to 3 days when stored in an airtight container at room temperature.

Freezing the Dough

Want fresh scones anytime? Freeze the dough before baking.

After shaping and cutting the scones, place them on a baking sheet and freeze until solid. Transfer the frozen scones to a freezer bag or airtight container and freeze for up to 3 months.

When you're ready to bake, place the frozen scones on a baking sheet and bake directly from frozen, adding 2 to 4 extra minutes to the baking time. You'll have fresh, warm scones whenever the craving hits.

Ingredients

  • 2 cups all-purpose flour
  • ⅓ cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter cold and cubed
  • 1 cup mixed fresh berries (or dried) such as blueberries, raspberries, and strawberries, washed and dried
  • ½ cup heavy cream
  • ¼ cup sour cream
  • 1 tablespoon orange zest
  • ½ cup White chocolate baking chips optional

Instructions

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  • Add the cold cubed butter to the flour mixture. Using a pastry cutter or a food processor, cut the butter into the flour until the mixture resembles coarse crumbs.
  • Gently fold in the mixed berries until evenly distributed in the flour mixture.
  • In a separate small bowl, whisk together the heavy cream, sour cream, and orange zest.
  • Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
  • Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together.
  • Pat the dough into a circle about 1 inch thick. Use a bench scraper or a sharp knife to cut the dough into 8 wedges.
  • Transfer the scones to the prepared baking sheet, leaving some space between each one.
  • Brush the tops of the scones with a little extra cream for a golden finish.
  • Bake in the preheated oven for 15-18 minutes, or until the scones are golden brown and cooked through.
  • Allow the scones to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely

Notes

For best results, use cold butter and handle the dough as little as possible to ensure tender scones.
Feel free to customize the berry combination according to your preference.
These scones are best enjoyed fresh but can be stored in an airtight container at room temperature for up to 2 days.
