How to Make Homemade Granola
Step 1: Prepare the Pan
Preheat the oven to 250 degrees F. Line two sheet pans or rimmed baking sheets with parchment paper.
Step 2: Make the Syrup Mixture
In a saucepan over medium heat, combine the butter and brown sugar. Bring the mixture to a rolling boil, stirring occasionally.
Be sure to use a large enough saucepan, as the mixture will become very hot and bubble vigorously. The syrup needs to reach a full boil so the brown sugar dissolves and the mixture creates the coating that helps form those crunchy clusters.
Remove from heat and add the vanilla.

Step 3: Mix the Dry Ingredients
In a large bowl, combine the oats and any ingredients you've chosen from the Nuts and Crunch, Seeds and Texture, and Flavor Boosters categories. Stir well so the nuts, seeds, and spices are evenly distributed throughout the oat mixture.
Pour the hot syrup mixture over the dry ingredients and stir until everything is evenly coated. Take your time with this step and scrape the bottom of the bowl as you mix so there are no dry pockets hiding underneath.
Step 4: Spread and Bake
Spread the granola evenly onto the prepared sheet pans. Gently press it into an even layer, then bake for about 45 minutes without stirring.
Step 5: Cool Completely
Remove the granola from the oven and let it cool completely on the pan without stirring or breaking it apart. As it cools, the butter and brown sugar coating firms up and helps the granola form those big, crispy clusters.
Once it’s completely cool, break it into whatever size clusters you like.
Step 6: Add Sweet Mix-Ins
Once cooled to room temperature, stir in any dried fruit, chocolate chips, or unsweetened coconut flakes.

- Once completely cool, stir in any Sweet Mix-Ins and break the granola into clusters.
