  • 1 1/2 cups all-purpose flour (7.5 oz or 217 g)
  • 1 1/2 tsp baking powde (0.2 oz or 6 g)
  • 3/4 tsp baking soda (0.13 oz or 3.7 g)
  • 3/4 tsp salt (0.15 oz or 4.5 g)
  • 3/4 tsp cinnamon (0.2 oz or 5 g)
  • 1/8 tsp ginger (0.07 oz or 2 g)
  • 1/8 tsp 0.07 oz, 2 g nutmeg (0.07 oz or 2 g)
  • 1/2 cup vegetable oil (4 oz or 109 g)
  • 1/4 cup applesauce (2 oz or 62 g)
  • 1 tsp vanilla (0.2 oz or 5 g)
  • 3/4 cup 5.5 oz, 155 g granulated sugar (5.5 oz or 155 g)
  • 3/4 cup 5.5 oz, 155 g brown sugar (5.5 oz or 155 g)
  • 3 eggs
  • 2 cups grated zucchini approx 1 lg zucchini (6 oz or 180 g)


  • Preheat your oven to 350°F (175°C).
  • Spray your bread pans with non-stick spray.
  • In a large bowl, combine the flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg. Set aside.
  • In another bowl, combine the vegetable oil, applesauce, both sugars, vanilla, and eggs. Mix well.
  • Gently fold the dry ingredients into the wet ingredients until just combined.
  • Fold in the grated zucchini. If you want, you can also add optional ingredients like chocolate chips or nuts.
  • Portion the batter into the prepared loaf pans. Bake at 350°F (175°C) for about 55 minutes or until a toothpick comes out clean.
