The Best Size Loaf for Zucchini Bread

When I sold mini loaves of quick bread at the farmers market, I always brought banana bread, cinnamon swirl bread, and zucchini bread. Without fail, the loaves of zucchini bread sold out first. Customers couldn’t resist the subtle sweetness and warm spices of this delicious loaf.

At home, I usually bake full-size loaves. They’re the best option when you want to slice and freeze for later, tuck into lunch boxes, or enjoy a warm slice with a cup of tea. Mini loaves are still my favorite way to bake for gifts or backstock, but a full loaf of zucchini bread is hard to beat for everyday snacking.

Ingredients for Homemade Zucchini Bread

You’ll need about 2 small-sized zucchinis or one large zucchini. This recipe works with fresh zucchini or even frozen zucchini if that’s what you have.

  • Grated zucchini – Shred using a box grater, a shredding attachment, or a food processor. Squeeze gently with paper towels to remove excess liquid and extra moisture.
  • Flour – All-purpose flour works best, but you can try a gluten-free version with a cup-for-cup blend.
  • White and brown sugars – White for sweetness and brown sugar for a deeper flavor.
  • Eggs – You'll need 3, room temp is best
  • Oil – Gives the softest crumb, use a neutral tasting one.
  • Warm spices –The perfect blend of cinnamon, ginger and nutmeg
  • Pure vanilla extract – A must for the best flavor.
  • Leavening agents – Just the right amount of baking soda and baking powder.
  • Salt – Just a pinch.

How to Mix Zucchini Bread for the Best Results

The first step to a tender loaf is handling the zucchini correctly.

  • Shred zucchini with a grater, food processor, or shredding attachment.
  • Remove a little bit of water to avoid sogginess but not so much that you lose the moisture that makes this bread special.
  • Whisk the liquid ingredients until smooth.
  • Whisk dry ingredients separately to evenly distribute the leavening agents.
  • Combine wet and dry gently
  • Fold in the zucchini last with a spatula.

What Pan Size Works Best?

This zucchini bread batter is versatile and works in several different pans. No matter which size you use, I recommend filling each pan about ⅔ full — the difference comes down to how long they bake and how many loaves you’ll get.

  • 9x5-inch bread pan – Yields 1 large loaf. Bake 50–60 minutes.
  • 8x4-inch bread pan – Yields 1 slightly taller loaf. Bake 55–65 minutes.
  • Mini loaf pans (5x3-inch) – Yields 3 mini loaves. Bake 35–40 minutes.
  • Muffin tin – Yields about 12 muffins. Bake 18–20 minutes 

How to Freeze Zucchini Bread

Zucchini bread is one of the best quick bread recipes for freezing. Here’s the easy step-by-step process:

  • Cool the entire loaf of zucchini bread completely.
  • Always double wrap
  • First cover tightly in plastic wrap, then store in a freezer-safe zip lock bag (or a freezer-safe container with a tightly fitted lid)
  • You can also freeze individual slices by wrapping in plastic wrap, then storing in a freezer -safe zip lock bag
  • Keeps for 3 months with proper storage.

Mini Loaves and Bulk Baking

Mini loaves are my favorite way to bake zucchini bread when I’ve got an abundance of zucchini. They’re quick to bake, easy to wrap in cellophane bags, stack neatly in my freezer in plastic storage containers.

This method works well if you sell at markets or need backstock.  Pull out loaves whenever you need a quick breakfast or a great addition to your table.

Variations

This zucchini bread is so good it truly stands on its own, but if you’d like to change things up, here are a few favorite mix-ins:

  • ½ cup chopped walnuts or pecans for a nutty loaf
  • 1 cup chocolate chips for a chocolate chip zucchini bread
  • ½ cup raisins soaked in 1 ½ tablespoon dark rum for a holiday treat

Ingredients

  • 1 ½ cups all-purpose flour 7.5 oz / 217 g
  • 1 ½ teaspoons baking powder
  • ¾ teaspoon baking soda
  • ¾ teaspoon salt
  • ¾ teaspoon cinnamon
  • ⅛ teaspoon ground ginger
  • ⅛ teaspoon ground nutmeg
  • ½ cup vegetable oil
  • ¼ cup applesauce
  • 1 teaspoon vanilla extract
  • ¾ cup granulated sugar
  • ¾ cup brown sugar
  • 3 eggs
  • 2 cups grated zucchini about 1 large zucchini

Instructions

  • Preheat oven to 350°F. Grease your loaf pan(s) or line with parchment paper.
  • In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
  • In a large bowl, whisk oil, applesauce, vanilla, and both sugars until smooth. Add eggs one at a time, mixing until fully incorporated.
  • Add the dry ingredients to the wet ingredients and stir gently until just combined.
  • Fold in the grated zucchini. Do not overmix.
  • Pour batter into prepared pan(s):
  • 9x5-inch loaf pan: Bake 50–60 minutes
  • 8x4-inch loaf pan: Bake 55–65 minutes
  • Mini loaf pans (5x3-inch): Bake 35–40 minutes
  • Muffin tin: Bake 18–20 minutes (makes 12 muffins)
  • Bread is done when a toothpick inserted in the center comes out clean.
  • Let bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Don’t skip blotting zucchini for best results.
