I've experimented with plenty of stevia cake recipes and this one is by far my favorite! This Decadent Sugar-Free Chocolate Cake is perfect for a special occasion or as a guilt-free indulgence when you have a sweet tooth.

How to Make Delicious Sugar-Free Cake

For years, I've been experimenting with keto desserts and sugar-free cake recipes, and I can confidently say, that this sugar-free chocolate cake recipe is a keeper!

Here's the secret to making delicious stevia cake recipes

  • Use Stevia in the cake mix because stevia is stable when heated at high temperatures.
  • Use Swerve Confectioners Zero Calorie Sweetener for the icing because it tastes like sugar and has no bitter aftertaste. 
  • Separate the egg whites, whip them, and fold them into the batter for a light and fluffy cake.

Here are the ingredients you'll need

Most of the ingredients you'll need are easy to find at your local grocery store. Opt for Dutch-processed cocoa powder for a deep, dark, chocolatey flavor.

Ready to make this yummy chocolate cake? Here's what you'll need:

  • Cake flour
  • Unsweetened cocoa powder
  • Salt
  • Baking powder
  • Stevia
  • Eggs
  • Coconut oil
  • Almond extract
  • Vanilla extract
  • Plant-based milk

What's the best baking pan for this cake?

The amount of batter this recipe makes is perfectly sized for a 6-inch cake pan, but you can bake it in any small baking dish, or springform pan you have. For tips on baking this recipe as cupcakes, see the Recipe Notes below.

Anytime I bake cakes, I use my Homemade Pan Release instead of pan spray and parchment paper. It's so convenient to have on hand! (Especially for those busy baking seasons!)

3 easy steps to make sugar-free chocolate cake

  1. Separate the yolks and whites of 3 large eggs. Whip the egg whites until stiff peaks form and set aside.
  2.  In another bowl, combine the egg yolks, coconut oil, almond milk, and both of the extracts.
  3. Add the wet mixture to the dry ingredients and mix until well combined. Gently fold in the whipped egg whites.

Pour the batter into a 6-inch cake pan and bake at 350 degrees f for 27 minutes. Let the cake cool in the pan for 5 minutes, then transfer to a wire cooling rack and allow the cake to cool completely before icing.

Recipe Notes

To make this recipe into cupcakes: Line a 12-count muffin tin with cupcake liners and generously spray with non-stick spray. Evenly divide the batter into the 12 muffin wells. Bake at 350 degrees for 22 minutes.

How to make substitutions with stevia cake recipes

  • Gluten-free: Feel free to substitute almond flour or coconut flour to make this a gluten-free recipe
  • Sugar Alternatives: I use Stevia as the sugar substitute, but you can use Monk fruit sugar or coconut sugar if you want to avoid the aftertaste from artificial sweeteners. 
  • Keto-If you are following a keto diet, just substitute almond flour for the cake flour. 

Storage Tips

This cake tastes best when eaten on the same day. If you're planning to serve it the next day, store it in an airtight container to keep it moist.

Ingredients

For the Cake

  • ½ cup Cake Flour
  • ¼ cup Unsweetened Cocoa Powder
  • ¼ teaspoon Salt
  • ½ teaspoon Baking Powder
  • ¼ cup Stevia
  • 3 ea Eggs room temperature, separated
  • ¼ cup Coconut Oil melted
  • ½ teaspoon Almond Extract
  • ½ teaspoon Vanilla Extract
  • ½ cup Almond Milk

For the Chocolate Icing

  • 3 tablespoon Swerve Confectioners Zero Calorie Sweetener
  • 3 tablespoon Unsweetened Cocoa Powder
  • 1 teaspoon Meringue Powder
  • ½ teaspoon Instant Expresso Powder
  • ⅛ teaspoon Salt
  • ¼ teaspoon Almond Extract
  • 3 tablespoon Warm water

Instructions

To Make the Cake

  • In a large bowl, combine ½ cup of cake flour, ¼ cup of cocoa powder, ¼ tsp. of salt, ½ teaspoon of baking powder, and ¼ cup of Stevia and set aside. 
  • Separate the yolks and whites of 3 large eggs. Whip the egg whites until stiff peaks form and set aside.
  • In another bowl, combine the egg yolks, ¼ cup melted coconut oil, ½ cup almond milk, 1 ½ teaspoons of almond extract, and 1 ½ teaspoons of vanilla extract. Mix until smooth.
  • Add the wet yolk mixture to the dry ingredients and mix until well combined. Gently fold in the whipped egg whites.
  • Pour this cake batter into a 6-inch pan that has been oiled and lined with parchment paper. Bake at 350 degrees f for 27 minutes or until a toothpick comes out clean.
  • Let the cake cool in the pan for 5 minutes, then transfer to a wire cooling rack and allow the cake to cool completely before icing. 

To Make the Icing

  • Combine all the icing ingredients together in a small bowl. Mix until smooth. Ice the cake immediately, or cover the icing with plastic wrap until ready to use.
