The Story Behind the Frosting

Back when I ran my cupcake shops, we had ten signature cupcakes on the daily menu. This peanut butter frosting topped one of our most-loved flavors: a fudgy chocolate cupcake with a big swirl of peanut butter frosting and a sprinkle of chopped Reese’s.

It was so popular, customers would ask for extra cups of frosting to-go. Some would come in just for the frosting. Eventually, we even joked about setting up a “frosting-only” express lane.

This recipe became one of our bakery's signature flavors, and now it’s yours too.

Ingredients You’ll Need

  • Smooth peanut butter- classic store-bought brands like Jif or Skippy work best
  • Unsalted butter, softened- for a creamy, fluffy base
  • Powdered sugar- sifted for a silky finish
  • Milk or heavy cream- use cream for richness or milk for a lighter version
  • Vanilla extract- just a splash brings the whole flavor together
  • Salt- my secret ingredient to balance the sweetness

Tools You’ll Need

  • Stand mixer with paddle and whip attachment (or hand mixer)
  • Large mixing bowl
  • Rubber spatula
  • Piping bag (optional, for decorating)
  • Airtight container for storing leftovers

How to Peanut Butter Icing

1: Beat the butter
Use a stand mixer or hand mixer with the paddle attachment to beat softened butter until very smooth and pale. Scrape down the sides as needed.

2: Switch to whip attachment
Add powdered sugar, salt, vanilla, and milk (or cream). Start mixing on low, then gradually increase to medium speed. Continue mixing until the frosting becomes light and fluffy.

3: Whip until silky
The secret to this frosting is the whip time. Keep going until the buttercream is airy and almost mousse-like in texture.

4: Swirl in peanut butter
Add smooth peanut butter and gently fold it in with a spatula-just enough to create visible peanut butter streaks throughout the frosting.

5: Frost and enjoy!
Use immediately or store in the fridge for later. Bring to room temperature and whip briefly before reusing.

  • For an extra nutty flavor, consider using peanut butter that contains small peanut chunks. You can also opt for natural peanut butter for a less sweet option. 
  • If your frosting turns out too thick, add a splash of milk or whipping cream. On the other hand, if it's too runny, add more powdered sugar to achieve the desired consistency.
  • You can store any leftover frosting in an airtight container in the refrigerator for up to one week. Just make sure to bring it to room temperature and give it a quick whisk before using it again.

  • 1 lb Butter Unsalted, softened
  • 2 lb Powdered sugar
  • ½ teaspoon Vanilla
  • ½ teaspoon Salt
  • ⅓ cup Milk or heavy cream for more richness
  • ½ cup Creamy peanut butter

Instructions

  • Using an electric or stand mixer fitted with a paddle attachment, beat softened butter until it is soft and smooth. Approx 5-10 minutes depending on how soft butter was to start with. You may need to scrape sides to fully incorporate butter.
  • Change to whip attachment and add powdered sugar, salt, vanilla, and milk or heavy cream. Begin mixing on low speed then slowly increase to medium. Continue mixing until buttercream is light and fluffy. The key to this buttercream is whipping it. It transforms into a silky, melt in your mouth frosting.
  • Using a rubber spatula, lightly fold in the creamy peanut butter so that you see streaks of peanut butter mixed throughout the frosting.

Notes

The swirl of peanut butter and vanilla frosting lends to the intense peanut butter flavor of this frosting. It is an optional step and works well for decorating cupcakes with a pastry bag. You may decide not to swirl If you are frosting a cake, since the swirls will become blended when you smooth the sides.
